I don't like to "healthily" all my lunch box baking for the kids, as sometimes you just want something tastes delicious. That said I've added wholemeal flour and oats to bump up the fibre (particularly soluble fibre) content of these cookies. In my work as paediatric dietitian I see a lot of kids that don't get enough fibre in their diets. A big culprit is the over reliance on a lot of starchy pre-packaged snacks for kids that are low in fibre, combined with insufficient fruits and vegetables in their diet.

These are my kids most requested snack item. I ALWAYS have them in the fridge and am still waiting for them to tire of them. What I like about this recipe is that it delivers a little hit of sweetness with less than a teaspoon of sugar per serve and plenty of fibre.

 

Ingredients 

13 medjol dates - pitted

1 cup dried cranberries

3/4 cup rolled oats

1/4 cup desiccated coconut (plus extra for rolling)

2 tsp coco powder

3 TBS light coconut milk

 

Place all ingredients in a food processor and blitz until smooth. Shape into small round balls with your hands and roll in desiccated coconut. Makes 21

 

Keep in an air tight container in the fridge.

These chocolate bliss balls feel like a really decadent treat but are actually a healthy every day snack. Great in the lunch box or with a coffee for all the Mums and Dads out there. I love making these during the winter months when our orange tree is providing us with delicious fresh oranges.

 

Ingredients:

13 medjool dates - pitted

1 cup dried cranberries

3/4 cup rolled oats

1/4 cup desiccated coconut (plus extra for rolling)

2 tsp coco powder

zest of 1 orange

3 Tablespoons of freshly squeezed orange juice

 

Place all ingredients in a food processor and blitz until smooth. Shape into small round balls with your hands and roll in desiccated coconut or for a slightly more sophisticated finish roll in coco powder or drinking chocolate. 

 

Keep in an air tight container in the fridge. Makes 21
