Seedy No Bake Biscoff Energy Bars

Calling all Biscoff lovers! If you're like me and sometimes find yourself sneaking spoonfuls straight from the jar (no judgment!), you're going to love these Biscoff Energy Bites. They deliver that same delicious flavor but with a nutritious twist! Packed with fiber, protein, and good fats from the seeds, plus a dose of iron from both the seeds and iron-fortified rice cereal, these bites are a satisfying snack for all ages. Because they're quite energy-dense thanks to the mix of seeds, fats, and sugars, you can slice them into bars for older kids or shape them into smaller bites for the little ones. Perfect for a quick and nutritious snack on the go!

 

Ingredients  (makes 12 - 16 pieces)

  • 1 cup of pepitas (pumpkin seeds)
  • 1 cup sunflower seeds
  • 1 cup shredded coconut
  • 1/4 cup chia seeds
  • 1 cup of rice bubbles
  • 1 cup of crushed Biscoff biscuits (approx. 1/2 packet of biscuits)
  • 125g salted butter
  • 1/4 cup maple syrup
  • 1/3 cup Biscoff spread
  • 90g melted dark chocolate to drizzle (optional)

 

Directions:

1. Start by crushing the Biscoff biscuits. An easy way to do this is by placing them between two sheets of baking paper and rolling a rolling pin over them until finely crushed.
2. Grease and line a rectangular baking pan (approx. 20x30 cm or similar).
3. In a large bowl, add all the dry ingredients and stir to combine.
4. In a small saucepan, combine the butter, maple syrup, Biscoff spread, and extra maple syrup. Heat over low, stirring until everything melts and starts to froth slightly.
5. Pour the melted mixture over the dry ingredients and mix well to combine.
6. Transfer the mixture into your prepared baking pan. Use the back of a spatula to press it down firmly and evenly.
7. If adding a chocolate drizzle, melt the dark chocolate in a microwave-safe bowl. Heat it in 30-second intervals, stirring between each, to avoid burning. Alternatively, melt the chocolate by placing the bowl over a saucepan of simmering water, stirring until smooth.
8. Drizzle the melted chocolate over the bars using a spoon.
9. Place the pan in the fridge for at least 2 hours, or leave it overnight to set.
10. Once set, cut into bars or bite-sized pieces. Store in the fridge for up to 1 week, or freeze for up to 3 months. Enjoy!
