Classic Muesli Bars

Have you ever noticed that many of the muesli bars on supermarket shelves are little more than oats and the occasional dried fruit? And when you do find a more nutrient-dense option with added seeds, they’re often either pricey or contain nuts—making them unsuitable for most nut-free primary schools. That's where our homemade muesli bar recipe comes in! Packed with all the good stuff—oats, seeds, and whole grains—it’s completely nut-free, loaded with fibre, healthy fats, and protein, all without too much sugar. Plus, by making them yourself, you’ll cut down on single-use plastic and lunchbox waste. And for those busy weeks? They freeze beautifully, saving you valuable time in the kitchen.

Makes: 12 bars

Ingredients:

  • 1 cup rolled oats

  • 1 cup puffed rice cereal

  • 1/3 cup dried fruit, chopped (cranberries or apricots)

  • 1/3 cup pumpkin seeds

  • 1 tbsp chia seeds

  • 1/3 cup shredded coconut

  • 1/3 cup wholemeal plain flour

  • 100g butter

  • ¼ cup honey

  • ¼ cup brown sugar

Method:

  1. Preheat oven to 180 degrees celsius and line a square cake tin with baking paper. 
  2. In a large bowl, combine oats, rice cereal, dried fruit, pumpkin seeds, chia seeds, flour and coconut. 
  3. Add honey, sugar and butter to a heatproof bowl and microwave for 30 seconds. Stir to combine into a thick, sticky mixture. 
  4. Pour into the bowl with the oat mixture and stir until nicely coated (may take 2-3 minutes of working the mixture). 
  5. Pour into prepared baking dish and flatten using the back of a spatula. Bake for 20-25 minutes until golden brown. 
  6. Once out of the oven, press down mixture again to flatten, allow to fully cool before slicing into rectangles. 

 

  • Store in airtight container for up to 1-week or freeze for up to 3 months
  • Perfect for lunchboxes or as an after-school energy snack

  • Packed with ample fibre from the seeds, oats and dried fruit 
  • Can add nuts if not taking to school or any combination of seeds
