Pesto Greens Focaccia

If you’re a sandwich lover, this one’s going to be a game-changer! My 10-year-old son is obsessed with my Pesto Greens Focaccia—seriously, if there's focaccia in the house, he’s already requesting it. And I totally get why. This sandwich is a powerhouse, packed with greens and loaded with good fats from the sunflower seed pesto that’ll keep you satisfied for hours. While focaccia can be a little elusive (I snag mine from a local Italian deli, though my independent supermarket stocks the rolls), don’t stress if you can’t find it—Turkish bread, ciabatta, or any sturdy loaf will do the trick. Get ready to fall in love with your lunch!

Ingredients (serves 1)

1 square of focaccia

1/2 zucchini peeled into ribbons using a vegetable peeler

3 thin slices of red onion

2 Tbs nut free pesto for school

Rocket or baby spinach 

1 Slice of fresh Mozzarella cheese

 

Directions:

Cut your focaccia lengthways and spread with a generous amount of nut free pesto. Top with your zucchini ribbons, red onion and your choice of baby spinach or rocket. Tope with mozzarella cheese and toast in the sandwich press. Cool completely before packing into a lunch box.
