Tuna Sweetcorn & Mayo Melts

This super easy, high protein , nutrient rich tuna sandwich will leave you satisfied for hours!  It's been a favourite of mine for years, and one I whip out whenever I'm pressed for time at lunch (or when I know I need to up my intake of oily fish - hello good heart healthy fats!). I like it toasted, but it's just as good fresh too. And here's an extra tip - the tuna mix is divine on corn thins as well ! When I send it in the lunchbox for my older kids, I like to toast it slightly then allow it to completely cool before packing. 

 

Ingredients: (serve 1)

  • 1 x panini style roll, cut lengthways
  • 1 x 90g tin of tuna in spring water
  • 1/4  of an avocado
  • 2 Tbs tinned (drained and rinsed) sweetcorn kernels 
  • 3 thin slices of red onion finely chopped
  • 1 tsp dijon mustard 
  • 2 Tbs whole egg mayonnaise
  • Handful of rocket (arugula) or baby spinach to assemble
  • 1 slice of tasty cheddar cheese
  • Salt and pepper

Directions:

Drain tuna and place into a small bowl along with diced onion, diced avocado, sweetcorn, mayonnaise and mustard. Season with salt and pepper then using a fork mash all the ingredients together. You can keep this mix for up to 3 days in the fridge at this point.

Assemble your panini by placing the rocket or baby spinach onto the base of the cut panini. Pile on the tuna mix, then top with the cheddar cheese. Toast lightly or enjoy as is.
