Strawberry and Lime Chia Pudding
I love having strawberries on hand. They're sweet, tasty, and require zero prep for lunchboxes—just toss them in! But I often find a few going soft in the fridge or coming back uneaten from school. Given how pricey berries can be, I hate wasting them. Over time, I’ve shared ideas like my strawberry smoothie for using up squishy strawberries, and today, I’ve got another one: strawberry & lime chia puddings.
This snack is packed with fibre, plant-based omega 3s, and protein, and it tastes just like summer. If you’re using tinned coconut milk (which gives it a richer flavour than the watered-down carton version), don’t forget it’s not a source of calcium—so include other calcium-rich foods in your child’s diet. And while you can make it with cow's milk, you'll miss out on that tropical coconut vibe the coconut milk brings.
Ingredients:
2 cps of frozen or fresh strawberries
1 x 400ml tin of light coconut milk
1/2 cup chia seeds
2 Tbs maple syrup
1 tsp vanilla bean paste (optional)
Zest of 1 lime
Directions:
Place all ingredients into a blender and blitz. Refrigerate for 2 hrs or until set. Keep for up to 5 days in an air tight container in the fridge.
