Veggie Packed Savoury Muffins

Are your kids looking for something other than a sandwich for lunch? Give these savoury muffins a go! They're light, fluffy, packed full of veggies and very very yummy!

 

Ingredients: 

  • 2 eggs
  • 2 cups self-raising flour
  • 1 cup milk 
  • ¼ cup olive oil
  • 1/2 zucchini grated (squeezed out excess water)
  • 4 mushrooms finely chopped
  • ½ cup diced ham
  • ½ cup grated cheddar cheese
  • 1 tsp garlic powder
  • Salt & Pepper 

 

Method: 

  1. Preheat oven too 190°C and grease a 12-cup muffin tin or line with cases.
  2. In a large bowl, whisk together eggs, milk & olive oil until well combined. Set aside. 
  3. In a separate bowl, combine flour, garlic powder, salt & pepper. 
  4. Stir in flour mixture to wet mixture until it just comes together. 
  5. Fold in grated zucchini, mushrooms, ham and grated cheese. 
  6. Spoon batter into prepared muffin tin, filling each cup about ¾ full. 
  7. Bake in preheated oven for 20-25 minutes, allow to cool & enjoy! 

Notes:

  • Protein packed and full of calcium.
  • Substitute any leftover veggies in the fridge.
  • Get creative with adding herbs, spring onion or other cheeses!
  • Perfect for taking on the go as a snack or making a healthy lunch.
