Veggie Packed Savoury Muffins
Are your kids looking for something other than a sandwich for lunch? Give these savoury muffins a go! They're light, fluffy, packed full of veggies and very very yummy!
Ingredients:
- 2 eggs
- 2 cups self-raising flour
- 1 cup milk
- ¼ cup olive oil
- 1/2 zucchini grated (squeezed out excess water)
- 4 mushrooms finely chopped
- ½ cup diced ham
- ½ cup grated cheddar cheese
- 1 tsp garlic powder
- Salt & Pepper
Method:
- Preheat oven too 190°C and grease a 12-cup muffin tin or line with cases.
- In a large bowl, whisk together eggs, milk & olive oil until well combined. Set aside.
- In a separate bowl, combine flour, garlic powder, salt & pepper.
- Stir in flour mixture to wet mixture until it just comes together.
- Fold in grated zucchini, mushrooms, ham and grated cheese.
- Spoon batter into prepared muffin tin, filling each cup about ¾ full.
- Bake in preheated oven for 20-25 minutes, allow to cool & enjoy!
Notes:
- Protein packed and full of calcium.
- Substitute any leftover veggies in the fridge.
- Get creative with adding herbs, spring onion or other cheeses!
- Perfect for taking on the go as a snack or making a healthy lunch.
