Overnight Berry WeetBix

A nourishing breakfast that’s ready when you are.

We’ve all heard the saying that breakfast is the most important meal of the day. While as a dietitian I can tell you that’s not strictly true—what really matters is eating regularly and nourishing your body across the day—a balanced breakfast can still make a big difference, especially for kids with early morning sports or a busy school schedule ahead.

This Overnight Berry Weetbix is a simple, make-ahead option that delivers a solid nutritional start without the need for a sit-down meal. With fibre from wholegrain cereal, chia seeds and fruit, it supports digestion and helps keep energy levels steady throughout the morning.

Pack it into our two-compartment lunchbox or keep it cool in our insulated food jar—either way, it’s ready when you are.

Ingredients: Serves: 3

1 ½ cups choice of yoghurt

½ cup strawberries chopped

½ cup raspberries

1 tbsp maple syrup

2 tsp vanilla essence

6 Weetbix biscuits (2 per serve)

1 tbsp chia seeds

1 ½ cups milk

Chopped fruit for topping

Shredded coconut for topping

Method:

  1. In a small container, crush 2 x Weetbix, sprinkle in chia seeds and top with enough milk to submerge. Set aside.
  2. In a microwave proof bowl, combine berries, maple syrup and vanilla essence and a splash of water. Microwave for 30 seconds and then crush the berries with back of a fork.
  3. Mix yoghurt and ½ of berry mixture together. Press Weetbix mixture into container well so it forms a firm base (optional: top Weetbix with sliced banana layer). Top with spoonfuls of yoghurt and spread evenly to cover. Drizzle over remaining berry mixture. Refrigerate for 3 hours or overnight.
  4. Top with remaining berries & coconut and enjoy!
