Winter is orange season!! If like me and you own an orange tree you've probably got more oranges than you know what to do with? Well make the most of those oranges and please the whole family with my light and fluffy orange cupcakes. Perfect for your weekend baking schedule, but be warned they may not make it to next week's lunch boxes!
1 cup white sugar
1 cup canola oil
2 cups SR flour, sifted
Rind of 1 orange
1/2 cup freshly squeezed orange juice
1/2 cup reduced fat milk
Heat oven to 180 degree C. Line 12 x 1/2 cup capacity muffin tray. Using an electric mixer beat eggs and sugar until light and fluffy. Add oil and orange rind and mix. Remove from mixer and fold through sifted flour and combined milk and juice. Spoon into prepared muffin cases and bake at 180 degrees for around 15 mins or until an inserted skewer comes out clean and the top is lightly golden. Makes 15 cupcakes.
