Chocolate Black Bean Brownies

These gooey-chocolatey black bean brownies are sure to be a hit with your kids. They are so good I suggest you get them in the freezer fast otherwise they're sure to disappear off the cooling rack!

Black beans are a good source of fibre, iron, folate and protein making this brownie a  great snack option to boost your lunch box nutrition. Best of all the brownies require minimal prep, you can make them in your food processor.

 

Chocolate Black Bean Brownies - Makes 16

 

1 x 400g tin black beans, drained and rinsed

2 Tbs coco powder

1 cup plain flour

3 eggs

1/2 cup white sugar

3/4 cup choc chips

smarties to decorate (optional)

125g melted butter

(To make a choc-raspberry version you'll need 1/2 cup frozen raspberry pieces that you can stir through with the choc chips).

Line at 20 cm x 20cm baking tray. Heat oven to 160 degrees C fan forced, or 180 degrees C for a conventional oven.

Put all ingredients into food processor (minus chocolate chips and raspberries (if using) ) and blitz until smooth. Stir through chocolate chips and raspberries and pour into prepared baking tray.

Optional - decorate the top with frozen raspberries, smarties or choc chips.

Pour into a 20 x 20cm pan tin and bake 180 for 20 mins.  Cool and cut into 16 pieces. Freeze for up to 3 months.
