Cheat's Quick & Easy Chocolate Coconut Chia Pudding

Chia pudding is something we really enjoy as a family as the weather gets warmer. A chocolate chia pudding is a great way to introduce these to your kids if they haven't tried them before. I love incorporating chia seeds into our diet as they are such a great source of fibre, protein, iron, calcium and are particularly high in plant based Omega 3 fats.

 

Ingredients:

1 tin of light coconut milk (400ml)

1/4 of drinking chocolate (I use Cadbury's)

1/2 cup chia seeds

 

Add all ingredients to the bowl of a food processor and whizz to bring it all together with no lumps. Refrigerate  for 2 hours or overnight. perfect to send to school in our insulated food jars!
