Apple, Cinnamon & Coconut Baked Oats
Baked oats are certainly having their moment, and we love them too. They're a great prep ahead option of ran easy nourishing breakfast. They also make a great breakfast on the run in our two compartment lunch box, or we love a bit of breakfast for lunch for something different. You can also cut it into smaller squares and use it as a snack addition to your kid's lunch boxes. For adults and older children you can add chopped almonds or walnuts for extra crunch &
nutrition. These baked oats are a great source of fibre, (particularly beta glucan which can help lower your cholesterol), protein, vitamins B and C.
Ingredients:
- 2 cups rolled oats
- 2 well ripe bananas mashed
- 1 cup milk
- ¼ cup greek yoghurt
- 2 tbsp maple syrup
- 1 tbsp cinnamon
- 1 x apple grated or roughly chopped
- ¼ cup desiccated coconut
Method:
1. In a greased, oven proof dish, combine mashed bananas, oats, milk, yoghurt, maple syrup, cinnamon, apple and coconut. Mix well to combine.
2. Bake in a hot oven for 35-40 minutes at 180 degrees, until oats are lightly golden on top.
3. Can be sliced and stored in airtight container in fridge and enjoyed cold or heated up with yoghurt and berries.
